Strawberry Goat Cheese Chicken Salad with Berry Vinaigrette

Berry Vinaigrette (makes 2-4 servings)

  • 6-7 large Strawberries fresh or frozen
  • ΒΌ cup Blueberries fresh or frozen
  • 1/8 cup Honey
  • 1/8 cup Balsamic Reduction
  • 1/8 cup Extra Virgin Olive Oil
  • Pinch of Salt

Strawberry Goat Cheese Chicken Salad (per person)

  • 1 Chicken Breast cooked and sliced
  • 3-4 cups Romaine Lettuce chopped
  • 4-5 large Fresh Strawberries diced
  • 2 Tablespoons Goat Cheese crumbled
  • 2 Tablespoons Pumpkin Seeds


Berry Vinaigrette

  • Combine all ingredients in a blender and blend until pureed and smooth. 
  • Dressing will keep in an air tight container in the fridge for up to 3 days. Shake well before serving. 

Strawberry Goat Cheese Chicken Salad

  • On a large plate, place all of the romaine lettuce. Top with strawberries, goat cheese, pumpkin seeds, and chicken breast. Drizzle with desired amount of Berry Vinaigrette and serve!
