Line a large baking sheet with parchment paper, and lay out puff pastry, set aside.
Trim the top off of the wheel of brie and position the brie in the center of the puff pastry, trimmed side up.
Spicy Strawberry Jam
In a small saucepan combine the frozen strawberry slices and brown sugar. Stirring regularly, cook over medium low heat until the mixture starts to bubble.
Using the back of a spoon or spatula, crush the strawberries into a paste.
Let strawberry mixture boil for 5 minutes, stirring regularly, until mixture is thickened.
Add in the chopped red thai chilli and stir to combine. Simmer mixture for one more minute and set aside.
Maple Thyme Walnut Layer
In a small mixing bowl combine the chopped walnuts, fresh thyme leaves, and maple syrup.
Stir to combine and set aside.
Assembly
Spread all of the prepared spicy strawberry jam over the top of the wheel of brie cheese.
Pile all of the prepared walnuts on top of the jam.
Starting at one corner, fold the puff pastry over top of the wheel of brie. Make sure to completely cover the entire wheel with the folded puff pastry.
In a small bowl, whisk the egg. Brush on top and on all sides of the puff pastry.
Bake for 26-28 minutes, until golden brown. Near the end of the cooking time keep a close eye on the brie and if it starts to leak out, remove it from the oven.
Using a large spatula, carefully transfer the brie to a serving plate and let sit for 10 more minutes before serving. Serve with crackers, tortilla chips, vegetables, or bread.
Notes
To reheat the brie, place the brie into an oven safe bowl, or cast iron pan and bake at 375°F for 10 minutes.
