Soft, chewy hot chocolate cookies are made with real hot chocolate mix for the richest cocoa flavor. They are an easy, cozy treat that is perfect for winter and holiday baking!
Preheat the oven to 350°F. In a medium-sized mixing bowl, add the flour, hot chocolate mix, baking soda and salt. Stir to combine and set aside.
In a large mixing bowl, add the butter, granulated sugar, and brown sugar. Using a hand mixer, mix the butter and sugar until they form a rough sandy mixture. Add the egg and vanilla and mix for an additional 2-3 minutes until the batter is light and fluffy. Add the dry ingredients and mix until the cookie dough is just incorporated. Stir in the chocolate chips and transfer the dough to the refrigerator to chill for 30 minutes.
Using a large cookie scoop, scoop the cookies (about 3 Tablespoons of cookie dough per cookie), roll them into balls and place on a baking sheet, leaving at least 4-5" between each cookie. Bake cookies for 14-15 minutes and transfer them to a cooling rack as soon as they come out of the oven.
To add the mini marshmallows, turn the broiler on high and place the cookies on a cookie sheet, topping each with 8-10 mini marshmallows. Place the cookies under the broiler for 15-30 seconds.Watch them very closely, the marshmallows brown extremely fast! Add any additional toppings you like, such as caramel sauce, crushed candy canes or flaky sea salt. I recommend adding the mini marshmallows to the tops of the cookies right before serving. This makes the cookies warm and melty like s'mores, and the marshmallows are perfectly creamy and toasted.
Notes
You can use homemade or store-bought hot chocolate powder. I recommend using my homemade hot chocolate mix for these cookies!
Chill the cookie dough for 3o minutes before baking it to let the flour fully hydrate and for fluffier cookies.
Store cookies in an airtight container at room temperature for up to 4 days.
