In a small mixing bowl, using a fork, mash the avocados to the desired consistency. Add diced red onion, diced tomatoes, lime juice, minced garlic, parsley, paprika, salt and pepper. Stir well to combine.
Cover and refrigerate for 10-15 minutes before serving for best flavor.
Notes
Tomato: Any type of tomato can be used, or the tomato can be omitted altogether for a more traditional guacamole.
Red Onion: Red onion gives a nice crisp, crunchy flavor, but any onion can be substituted.
Lime Juice: Lime juice prevents browning and is an essential ingredient.
Parsley: Fresh parsley can be swapped for cilantro for a more traditional version.
Add Spice: Add diced jalapeño, red chili flakes, or cayenne pepper to make spicy guacamole.
Adjust the texture to your preference by mashing the avocados a lot or a little. For an ultra-smooth guac, use a food processor to pulse the ingredients together to your desired consistency.
Store guacamole tightly covered or in an airtight container in the fridge for up to 3 days (it is best within 24 hours). Stir before serving.
