Preheat the oven to 350°F and cut a 8 x 8 piece of aluminum foil.
Place the garlic cloves in the middle of the piece of aluminum foil.
Pour olive oil on the garlic cloves and season generously with salt and pepper.
Gather the corners of the foil and bunch them together creating a little package.
Place on a baking sheet or in an oven safe dish and bake for 20-25 minutes until soft and golden brown.
Meanwhile, in a small mixing bowl add the light mayonnaise, lemon juice, thyme leaves, and a generous pinch of salt. Stir well and set aside.
When the garlic has finished roasting, set it aside and let it cool slightly.
Open the garlic package and transfer the roasted garlic cloves into a small ramekin. Using the backside of a fork, smash the garlic cloves into a paste.
Scoop the mashed garlic paste into the prepared mayonnaise mixture and stir.
Cover and refrigerate for 30 minutes.
Notes
One serving equals about 2 Tablespoons of prepared aioli.
