In a separate large bowl toss the chopped romaine with your choice of dressing.
Transfer the salad to two large plates or bowls. Top with diced red onions, bell pepper, cucumber, cheddar cheese (optional), and the honey hot chicken. Serve immediately.
Any kind of chicken can be used for this recipe, such as chicken tenders, chicken thighs, whole roasted chicken, shredded rotisserie chicken, and even leftover turkey!
Make it vegan by substituting the chicken for crispy tofu, using a creamy vegan dressing and omitting the cheese.
