What is Christmas Crack or Graham Cracker Toffee?
Christmas crack is typically made with saltine crackers, but we decided to up the anti and use graham crackers to add a new depth of spice and flavor to this classic recipe.
Christmas crack or graham cracker toffee is made using graham crackers as a base, and deliciously soaking the graham crackers in a caramel toffee sauce. We then bake the crackers and caramel sauce together so it reduces and bakes all of that toffee goodness directly into the graham crackers. It is only made better by topping it with white and semi-sweet chocolate chips!

Ingredients for Christmas Crack with Graham Crackers

- Graham Crackers - I prefer to use honey graham crackers, although regular graham crackers will work great too.
- Chocolate Chips - A mix of semi-sweet and white chocolate chips gives the perfect balance of sweetness to this Christmas crack recipe. Milk chocolate chips may be substituted for semi-sweet if preferred. Milk chocolate chips will make the Christmas crack sweeter.

Making Christmas Crack
The process of making Christmas crack is ridiculously easy and only requires six simple ingredients.

Step 1
Spread out the graham crackers in a single layer on the parchment paper-lined baking sheet.

Step 2
In a small saucepan add the butter, granulated sugar, brown sugar, and vanilla extract. Place the mixture over medium heat, whisking constantly bring the mixture to a boil. Once the mixture is boiling, stop whisking and let it boil for a few minutes. Remove the caramel mixture from the heat and pour over the graham crackers.

Step 3
Promptly spread the caramel toffee sauce in a thin, even layer over top of all of the graham crackers. An offset spatula works perfectly for this.
Work fast as the caramel toffee sauce cools quickly. As it cools it becomes thicker and harder to spread around the crackers.

Step 4
Bake the graham crackers with the caramel mixture for 5 minutes. Then sprinkle the chocolate chips over the entire pan, return it to the oven and bake for an additional 4 minutes.
Remove it from the oven, and sprinkle on the crushed graham crackers. Let the crackers cool completely on the pan.

Step 5
Once the crackers have cooled, break the crackers apart and enjoy!
This Christmas crack is perfect for cookie exchanges or holiday dessert trays. I love to have a little stash at home too, it is just that good!
Helpful Tips
- Spread the toffee mixture onto the graham crackers quickly. As the toffee cools it will set up and become more difficult to spread.
- Do not touch the toffee while it is hot! Candy, more so melted sugar will adhere to your skin instantly, it will burn and be hard to get off. So I repeat, do not touch the toffee while it is hot!
- For easy cleanup, place all of the utensils that you used into the pot that held the toffee mixture and fill it with water until everything is completely submerged. Bring it to a simmer on the stove and all of the toffee mixture will magically evaporate!
