Step 1
Preheat the oven to 400°F.
In a large 9x13 oven-safe casserole dish, add the coconut cream, powdered ginger, garlic, maple syrup, soy sauce, apple cider vinegar and red curry paste. Using a whisk, mix well to combine.

Step 2
Layer the spinach on top of the sauce and spread the dumplings out in a single layer on top of the spinach.

Step 3
Cover with aluminum foil and bake for 25 minutes, stirring once halfway through the baking time.
Remove the foil and continue baking for 5-10 minutes until the tops of the dumplings start to turn lightly golden brown.

Step 4
Top with all desired garnishes and toppings, serve and enjoy!

Instructions
- Preheat oven to 400°F. In a large 9x13 casserole dish, add the coconut cream, ginger, garlic, maple syrup, soy sauce, apple cider vinegar, and red curry paste. Whisk the sauce together until it is fully combined. Add the spinach on top of the sauce and place the dumplings on top of the spinach in a single layer.
- Cover the pan tightly with aluminum foil and bake at 400°F for 25 minutes, stirring once halfway through. Remove foil and continue baking for an additional 5-10 minutes until the sauce is bubbling and the dumplings are starting to slightly brown on top.

Oh my goodness! This is phenomenal. So EASY to whip up - pun intended haha I added more veggies and a side of rice. It was sooo delicious! This was exceedingly sweet for a savory dish perhaps using 1/3 of the amount of maple syrup would’ve made it more palatable. Both of my husband and I did not enjoy it as it was written. I ended up adding natural peanut butter, jalapeños, cilantro, large amount of chili crisp oil. This made it better, but I still wouldn’t make it again.
