Here we are again, another month has come and gone. October was a super quiet month for us, it was our first month since April that we actually stayed home for the whole month!
We spent this last month hyper focused on our website and the blog and now we are (finally) seeing some improvements in our traffic! Hallelujah.
Thanksgiving
We celebrated Thanksgiving in October and instead of cooking the turkey traditionally, I spatchcocked it!
Spatchcocked Turkey?
A spatchcocked turkey is when you cut out the backbone and compress the breastbone until the turkey lays flat. It cooks more evenly and a 15-20 lb turkey is ready in less than TWO HOURS! It is absolutely magical!

I had never spatchcocked a turkey before, so of course I was super worried the whole day that I had just completely ruined the iconic Thanksgiving bird. But to my amazement, we took it out of the oven a mere hour and a half later! When it was ready and we cut into it, the juices literally ran down the knife.
(of course I totally forgot to take a picture after it was cooked... But in my defence I did have a house full of hangry people) ??♀️
In the end it turned out to be one of the best turkeys that I had ever cooked and I will definitely be using this method again! Let me know in the comments below if you would like me to do a post on how to execute a spatchcocked turkey!
Halloween
We are not big Halloween people but I still like to decorate. We are talking tasteful decorations, pumpkins, a couple house monsters and our buddy Chewy! I am really only here for the candy and so were the kids, this year we had 120 little dressed up visitors.
Now we are into full blown Christmas mode and we are excited, just this week I made sure my Christmas music playlist ready to go! We are THOSE people. ?

Our house turned 5!
Our “new” house turned FIVE years old this October! I can not believe that it has been five years since we built our home. It is mind blowing to look at the pictures from when we first took possession. We were basically the first house on our block, nothing beside us or behind us, and now a short five years later the community is finished and we have multiple blocks of houses behind ours.

It is pumpkin spice everything time and I am living for it! These cupcakes have the most perfect crumb. They are so moist and they are topped with a cream cheese buttercream!

This Lentil Turkey Chili is perfect for the looming winter season ahead! It is super healthy and packed full of minerals and nutrients.
What’s coming
We have a lot of exciting things in the works right now. My head kind of feels like it is going to pop off, so if we can actually pull everything off (in time) it will be a freaking miracle!
Right now we are in the middle of a total website redesign!!! It should be ready to be released within the next few weeks. ??
The hope is with this redesign that the website becomes easier to navigate and this will allow me to have WAY more control behind the scenes.

Maybe I should not have tried to take on two giant projects at once, but here we are. ?
