Today is already the 10th Day of Christmas! Today we are switching things up a little bit, and instead of a sweet treat, we are sharing a savoury appetizer! Spicy Strawberry and Walnut Brie is PERFECT for the holiday season! It is easy to make and it is absolutely delicious.

Spicy strawberry and walnut brie is made of a quick homemade spicy strawberry jam, a maple thyme walnut layer, and then it is all wrapped up in a sheet of puff pastry and baked for about 30 minutes. When you cut into it the layers ooze out of the pastry and combine together in a sweet and spicy harmony of flavour!

How to prepare
Line a large baking sheet with parchment paper, and lay out puff pastry, set aside. To trim off the top of the brie place the wheel of brie on its side and using a sharp knife cut off the top pieces of rind. Position the trimmed brie in the center of the puff pastry, trimmed side up.

Spicy Strawberry Jam
In a small saucepan combine the frozen strawberry slices and brown sugar. Stirring regularly, cook over medium low heat until the mixture starts to bubble. Using the back of a spoon or spatula, crush the strawberries into a paste.
Let strawberry mixture boil for 5 minutes, stirring regularly, until mixture is thickened. Add in the chopped red thai chilli and stir to combine. Simmer mixture for one more minute and set aside.
Maple Thyme Walnut Layer
In a small mixing bowl combine the chopped walnuts, fresh thyme leaves, and maple syrup. Stir to combine and set aside.

Assembly
For the first layer, on top of the trimmed brie, spread all of the prepared spicy strawberry jam over the top.
Next, pile all of the prepared maple thyme walnuts on top of the jam.
Starting at one corner, fold the puff pastry over top of the wheel of brie. Make sure to completely cover the entire wheel with the folded puff pastry.

In a small bowl, whisk the egg and brush on top and on all sides of the puff pastry.
Bake the prepared brie for 26-28 minutes, until golden brown. Near the end of the cooking time keep a close eye on the brie and if it starts to leak out, remove it from the oven.
Using a large spatula, carefully transfer the brie to a serving plate and let sit for 10 more minutes before serving. Serve with crackers, tortilla chips, vegetables, or bread.

Make Ahead for the Holidays
This is the PERFECT recipe to make ahead for all of those busy holiday get togethers or parties. To make this recipe ahead, prepare the spicy strawberry jam and maple thyme walnuts, and refrigerate in airtight containers until ready to use (up to 3 days).
On the day of, un roll the puff pastry, trim the brie, and layer on the toppings! With the toppings prepared in advance, this will only take 10-15 minutes!

To save even more time, bake the brie in a cast iron pan that is only slightly larger than the wheel of brie. This way if any of the puff pastry opens up during baking, the brie will stay contained for serving.
To reheat the brie, place the brie into an oven safe bowl, or cast iron pan and bake at 375°F for 10 minutes.

- Brie Cheese Wheel, 550 grams
- 1 sheet Puff Pastry, 10”x10”
- 1 Egg

Maple Thyme Walnut Layer
- 1 cup Walnuts, coarsely chopped
- 1 teaspoon Fresh Thyme Leaves
- 1 Tablespoon Pure Maple Syrup
Instructions

- Trim the top off of the wheel of brie and position the brie in the center of the puff pastry, trimmed side up.
