Creamy Honey Mustard Sauce
The creamy honey mustard sauce can be used far beyond this recipe. It can be used on salads, as a dip, and it is even more delicious with fish sticks!
It can be stored for up to a week in an airtight container kept in the fridge. Before serving, just give it a quick stir and it is good to go!
The Chicken
Cooking the chicken is relatively simple. First, generously season chicken breast with salt and pepper.
In a large cast iron pan (again with the cast iron ??), add the extra virgin olive oil, and over medium heat add the seasoned chicken breasts.
cover the chicken while it is cooking
To cut down on the spatter of oil and to ensure a juicy chicken breast, use a piece of aluminum foil and curl the corners in. Loosely place over the top of the pan, and make sure that all of the foil is inside the pan. The reason it is important that the foil is all inside the pan is the oil will spatter and collect on the foil and you do NOT want that oil running down the sides of the pan.

This is especially important if you are using a gas stove. Dripping oil can catch fire in the blink of an eye over gas, so take care and be careful when cooking anything over an open flame.
Covering the chicken loosely with aluminum foil during cooking allows the outer portion of the chicken to get crispy. It gets crispy by allowing a small amount of air to surround the chicken. All while keeping the inside juicy and flavourful.

tight fitting lid + steam = not crispy and possibly dry chicken
Whereas if you were to use a lid, the lid would trap the steam, which turns to water, and your chicken breast will never get a crispy exterior. The excess water that is created when using a lid can make your chicken breast dry out as well.
Flip the chicken every 5 or so minutes, and cook for 15-20 minutes. Until the chicken is fully cooked and no longer pink on the inside. Or you can test the fattest part of the chicken breast with a meat thermometer, and the recommended temperature for poultry is 165°F.
Once cooked the chicken will have a nice crispy browned exterior and a juicy flavourful interior.
Slice chicken and spoon the desired amount of creamy honey mustard sauce on top.
