How to Make Homemade Hamburger Helper Beef Stroganoff

Step 1
In a large pan cook the ground beef until it is fully browned. Drain off excess fat if necessary and add the onion. Saute for 2-3 minutes.

Add the minced garlic, paprika, onion powder, garlic powder, mustard powder, salt and pepper. Stir to combine and cook for 1 minute.

Add the mushrooms, apple cider vinegar, ketchup, and Worcestershire sauce, cooking for a few minutes until the mushrooms have softened.

Step 4
Next, add the uncooked pasta noodles, beef broth, and whole milk, stirring to combine. The pasta should be fully submerged. Bring to a boil and once boiling, lower the heat and cover with a tight-fitting lid. Stirring regularly, cook for 12 minutes or until the noodles are al dante. Remove from heat.

Step 5
After the pasta has reached al dante, add the parmesan cheese, peas and parsley (if using).

If you are using frozen peas in this recipe, let the pasta cook for an additional 1-2 minutes to defrost and warm the peas.

- Using different pasta shapes might require liquid adjustments. This recipe has only been tested with fusilli pasta.
- Stir the pasta regularly while cooking to prevent it from sticking and burning.
- All kitchens and cooking utensils are different, and if you find that you are running out of liquid before the pasta is cooked, try adding more liquid. ¼ cup of beef broth + ¼ cup of milk at a time is a good starting point.

Thanks thos looks like ultimate comfort food. I appreciate the vegan option, would be great with some direct swaps. I would use textured soy protein tvp because I don’t think it’s too processed if it’s non gmo and it would taste better than lentils. I think I’ll try it with just tvp, and non dairy subs and I imagine it’ll be a fave. Thanks for your interest in the vegan option!

Hey, I forgot to mention mention, speaking of this fabulous recipe with a vegan option, although lentils are an excellent option for folate at 358mcg per cup, TVP is better in Tryptophan and Tyrosine if someone is looking to produce serotonin, improve sleep, improve blood pressure and really get the comfort out of the comfort food.
