The instructions below make one breakfast taco at a time. You must use a frying pan that is the same size, or slightly smaller than the tortilla shell, or the egg will spread too far.

In a small bowl, whisk one egg and set aside.

Melt ½ teaspoon of butter over medium heat in a frying pan (see note above about the frying pan size). Pour in the whisked egg and add 1 Tablespoon of shredded cheese and any seasonings you want to use.

Step 3
Cover the egg with one flour tortilla before the egg is fully cooked. Cook for 1-2 minutes until the egg is fully set.

Step 4
Flip the breakfast taco onto the tortilla side, add the chopped bacon, chives and more shredded cheese. Cook for 1 minute.

Fold the taco in the pan and cook on both sides until it is golden brown and crispy. Flour tortilla shells can burn extremely easily, so keep a close eye on them and adjust the heat as necessary.

- 8 Large Eggs
- 1 cup Cheddar Cheese shredded and divided
- 8-10 pieces Bacon cooked and chopped
- 4 teaspoons Butter divided

Instructions
- These instructions make one taco at a time. It is very important that you use a frying pan that is the same size, or slightly smaller than the tortillas, otherwise the egg will spread too far.
- In a frying pan that is the same size as the tortilla, melt ½ teaspoon of butter over medium-low heat. While the butter is melting, whisk one egg in a bowl until smooth. Once the butter has melted, add the egg to the frying pan. Add 1 Tablespoon of cheese and any preferred seasonings (like mango chipotle or salt and pepper). Cover the egg and cheese with a tortilla, pressing it gently into the egg. Cook for 1 - 1½ minutes.
- Flip the whole egg/tortilla completely over so the tortilla is on the bottom of the pan. Add 1 Tablespoon of cheese on top of the egg, chopped bacon, and chives. Cook for 30 seconds, fold the tortilla in the pan and brown the outsides of the tortilla on both sides. Watch the tortilla closely, and monitor the temperature, tortillas burn very easily.
- Once cooked, serve immediately with a dipping sauce, or keep warm in an oven preheated to 175℉ on a baking sheet lined with a wire rack while preparing the rest.Repeat all the above steps until all of the breakfast tacos are made.
